 WHAT IS RAW HONEY? |
Raw honey is best described as honey âas it exists in the honeycombâ. It is extracted straight from the beehive. It is usually just filtered to remove small bits of beeswax, pollen, and parts of bees. Raw honey is the purest form of honey and is not pasteurized after extraction. Raw honey, real honey, unfiltered or natural honey all are the same thing- Pure Honey. Raw Honey is characterized by a cloudy or opaque appearance.
 IS ALL HONEY THE SAME? |
No, there are many flavors and varieties of honey depending on the floral source of the honey e.g. Eucalyptus, Tea Tree, Wild Forest, etc
 WHY ARE SOME HONEY CRYSTALLIZED? |
Over some time real honey crystallizes. Its consistency primarily depends on the sugar composition of the nectar collected from the floral source. Honey with higher fructose tends to remain liquid while the honey with higher sucrose content crystallizes faster.
 HOW SHOULD I STORE MY HONEY |
Since honey is very hygroscopic, it should be stored in a dry and cool place using a sealed container. Many times honey tends to crystalize and keeping honey in a refrigerator can accelerate the crystallization process. You can easily liquefy the crystallized honey by heating it in a hot water bath. It is advised not to increase the temperature of the honey beyond 50 degrees Celsius to preserve the natural flavor or attributes of the honey.
 DOES PASTEURIZATION IMPACT HONEY? |
Honey Pasteurisation is a process of heating honey to a high temperature. However, in most cases, the pasteurization of honey also disturbs natural flavor, destroys the antioxidants in honey, and reduces the honey enzymes as well.
 DOES HONEY EVER EXPIRE? |
Honey properly stored in sealed containers can remain stable for decades. But it is susceptible to chemical and physical changes during storage such as loss of aroma or change in color. Raw honey has an unlimited shelf life and never spoils however practical purposes a shelf life is often stated on the packaging.
